Icicle Pickles

Ingredients

  • 2 gall. cucumbers
  • 1 pt. salt
  • 1 Tbsp allum
  • 2 qt. vinegar
  • 8 pts. sugar
  • 1 handful of pickling spice

Preparation

Step 1

Slice cucumbers thickly. Add 1 gallon of water that has been combines with 1 pint of salt. Make sure cucumbers are covered. If necessary, put in a baggie of water on top to hold down. Let stand 1 week. Drain & rinse.

Cover with boiling water to which 1 Tbsp. of allum has been added. Let stand 24 hours. Make syrup of vinegar, sugar & pickling spice. Bring to a boil and pour over pickles. Repeat for 4 mornings. Each time, boiling hot. On the 4th morning, put pickles in jar and cover with syrup and seal.
