Sunrise Salad

Ingredients

  • 4 cups arugula
  • 1 large fire roasted red pepper, chopped
  • 10 Sunsweet yellow cherry tomatoes, sliced in halves
  • 1 avacado, chopped
  • 1 T. red wine vinegar
  • 2 T. olive oil
  • 2 T. water
  • salt and pepper

Preparation

Step 1

Mix the red wine vinegar, olive oil, water, salt and pepper. Toss with arugula. Plate and top with veggies.
