Bacon and Tomato Dunk ****

Ingredients

  • 10 slices bacon,cooked until crisp,drained on paper towels and cooled.
  • 3 lg tomatoes, peeled,seeded,and finely chopped
  • 1 cup mayonaise
  • 1 T Dijon mustard
  • 1/4 cup minced green onion
  • 1/4 cup minced fresh parsley

Preparation

Step 1

-Combine all the ingredients in a food processor fitted with the metal blade, in a blender,or a mixing bowl, taking care to preserve some of the texture. Taste and adjust the seasoning.
-Can prepare up to 4 days in advance and refrigerate.
-Serve as a dunk w/ pita chips,crackers or bagel chips.
-Try adding chopped avocado and serving stuffed in raw mushrooms.
