Pomegranate, Goat Cheese & Walnut Salad

Ingredients

  • Dressing:
  • 1 head radicchio
  • 1 small bunch red-leaf lettuce
  • seeds from 1 large pomegranate
  • 1-1/2 cups chopped walnuts
  • 4 oz. goat cheese, crumbled in pieces
  • 1/2 cup red wine
  • 1 Tbsp. sugar
  • 1-1/2 Tbsp. red-wine vinegar
  • 1/2 cup olive oil
  • salt & pepper

Preparation

Step 1

Toast walnuts in small pan over very low heat for about 15 minutes, tossing occasionally.

Mix wine & sugar in small pot; barely simmer over low heat until reduced by a third, about 15 minutes.

Wash/dry lettuce and radicchio, tear into medium pieces. Combine lettuce, radicchio, walnuts and goat cheese in bowl.

In another bowl, mix wine (still warm), vinegar, oil, salt & pepper. Whisk well.

Toss lettuce with dressing, enough just to coat.

Place on salad plates and sprinkle pomegranate seeds on top.
