Quatre Épices (Four-Blend French Spice)

This Frence spice blend is commonly used in sausage making and in dishes that need long simmering, such as stews. Sometimes cinnamon or allspice are added to the blend.

Ingredients

  • 2 T white pepper
  • 2 t nutmeg, freshly grated
  • 1 t cloves
  • 1 t dried ginger

Preparation

Step 1

The standard French "four-spice" blend is has pepper as its base.

Grind all the ingredients to a fine powder.

The mixture will keep in an airtight container for 3-4 months.
