Chocolate Buttermilk Pie

  • 1 1/2 cups choc. chips
  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 6 lg. eggs
  • 1 cup buttermilk, at room temperature
  • 1 1/2 tbsp. vanilla
  • 1 unbaked 10" pie crust
  • Whipped cream

Preparation

Step 1

Preheat oven to 325 degrees. Position rack in center of oven.
Place the choc. chips in a double boiler & melt over low heat, stirring contantly.
In a medium bowl, whisk together the sugar, flour & salt until well combined. In a large mixing bowl, combine the eggs, buttermilk & vanilla. Add the sugar mixture & mix with an electric mixer. With a rubber spatula, stir the melted choc. into the batter.

Pour batter into the piecrust. Place pie in oven on middle rack. Bake for 1 hour & 15 minutes or longer, or until the pie is crisp on top & a knife inserted in the center comes out with just a bit of moist chocolate on it.

Remove from oven & cool completely. Let stand at least 1 hour before serving. Refrigerate if not using immediately. Garnish with whipped cream.
