- Topping:
- 1 package (1.3 pounds) ground turkey
- 1 large shallot, chopped
- 2 cloves garlic, chopped
- 2 tablespoons lemon juice
- 1 teaspoon fresh thyme, chopped
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 slices sharp Vermont cheddar cheese
- 1 tablespoon olive oil
- 1 medium red onion, peeled and thinly sliced
- 8 ounces sliced mushrooms
- 1 teaspoon Worcestershire sauce
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Focaccia or hearty whole-grain bread, sliced
- Mustard or mayonnaise, if desired
Preparation
Step 1
Burgers: In a bowl, mix together turkey, shallot, garlic, lemon juice, thyme, salt, and pepper. Form into 4 patties, each about 4 inches in diameter. Cover and refrigerate for at least 30 minutes.
Heat an outdoor grill or stovetop grill pan to medium-high heat. Coat with cooking spray and grill burgers 4 to 5 minutes per side, covering halfway through cooking, until internal temperature reaches 160 degrees F. on an instant-read thermometer. Add a slice of cheese to each burger and let melt.
Topping: While burgers are grilling, heat olive oil in a large skillet over medium-high heat. Add onions and mushrooms and saute for 8 minutes, stirring occasionally, until golden brown. Season with Worcestershire sauce, salt, and pepper.
Serve burger on grilled focaccia or whole-grain bread, spread with mustard or mayonnaise if desired. Top with sauteed onions and mushrooms.
