Step 1
Chop 2 slices of bacon and render over medium heat in large pot then add 1 chopped medium onion, cook about 1 minutes until tender. THen add 1 c uncooked long grain regular rice and coat with bacon fat. Then stir in 1 can (14 oz) chicken broth and 1/2 c water. Bring to boil, then reduce heat, cover and simmer 20 minutes. Gently stir in peas. Cover and cook 1 to 2 minutes. Stir in 3/4 c grated Parmesan cheese and pepper. I TRIED THIS ON 7/12/10 AND EVERYONE LOVED IT. I DID NOT USE THE ONION OR PEAS. ALSO MAKE SURE TO COOK BACON WELL.
