Ginger Coconut Cauliflower Rice

Ingredients

  • 1 lg head cauliflower
  • 1 " piece fresh ginger root, peeled & finely grated
  • 1/2 tsp salt
  • 1/4 c. unsweetened shredded coconut
  • chopped green onion

Preparation

Step 1

Preheat oven to 425 degrees. Trim cauliflower and place florets in food processor. Pulse until rice like consistency. Transfer rice to a mixing bowl add ginger and salt mix until well bended. Spread rice in a single layer on unlined baking sheet. Cook 15 minutes, toss once during cooking. Remove from overn and mix in coconut. Place in serving bowl and top with onions.
