Ingredients
- 2 cups cooked dried white beans
- 1/4 cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon minced shallots
- 1 teaspoon minced garlic
- 1 tablespoon finely-chopped parsley leaves
- Salt to taste
- Freshly-ground black pepper to taste
Preparation
Step 1
In a mixing bowl combine all the ingredients together. Mix well. Season with salt and pepper. Cover and let stand for at least 1 hour.
This recipe yields about 2 cups.
