Parmesan Vegetables

Ingredients

  • 2 small yellow squash
  • 1 small onion
  • 1 small red bell pepper
  • 1/2 lb. small green beans
  • Vegetable cooking spray
  • 1 tbsp. grated Parmesan cheese
  • 3/4 tsp. salt
  • 1/8 tsp. pepper

Preparation

Step 1

Slice squash and onion; separate onion into rings. Cut bell pepper into 1-inch pieces. Combine cut vegetables and green beans in a large bowl; coat with vegetable cooking spray, tossing gently. Sprinkle vegetables with cheese, salt, and pepper.

Grill vegetables in a lightly greased grill wok, covered with grill lid, over medium-high heat (350° to 400°), stirring occasionally, 20 minutes or until vegetables are tender.
