Squash It

I made this for an easy, inexpensive dinner. We both enjoyed it.

Ingredients

  • 3 Tbs. garlic, chopped
  • 1 lb. squash, shredded
  • 1/2 lb. cooked linguine
  • 1 //2 c. sliced almonds, toasted
  • 1 Tbs. lemon juice
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • Shaved parmesan

Preparation

Step 1

Heat 1 Tbsp. olive oil in skillet.
Add chopped garlic and shredded squash. Cook 1 minute. Toss with cooked linguine, toasted sliced almonds, 2 Tbsp olive oil, lemon juice, salt and pepper. Top with shaved Parmesan.
