Ingredients
- Crust:
- 2 cups graham cracker crumbs - 1 pkg. = 1.5 cups.
- 3 tbsp. dark brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- Pinch of salt
- 6 tbsp. butter, melted
- Filling:
- 4 lg. egg yolks, room temp.
- Finely grated rind of 1 lime - easy
- 1 - 14 oz. can sweetened condensed milk
- 1/2 cup fresh squeezed lime juice
- Whipped cream - opt.
Preparation
Step 1
Combine crust ingredients, except butter. Mix in melted butter. Press into 9" pie plate. Refridgerate 15 min. Preheat oven to 350. Combine egg yolks and rind in mixing bowl, beat at high speed 8 min. Gradually add condensed milk and beat 7 min. or until fluffy. Add lime juice, beat 2 min. Pour into chilled pie shell. Bake 12 min. until filling is set. Refridgerate 3 hours. Top with whipped cream.
