Potato Soup

Ingredients

  • 4 cups potatoes (sliced or diced)
  • 1 carrot, diced
  • 1 Tbsp. onion (minced)
  • 1 1/2 tsp. salt
  • 2 cups hot water
  • 2 Tbsp. margarine
  • 1 Tbsp flour
  • 1 can cream of mushroom soup (potato or celery works also)
  • 2 cups of skim milk
  • 1 hard boiled egg

Preparation

Step 1

Brown onion in margarine. Add flour blend well. Add potatoes, carrots, salt, and water. cover and cook until vegetables are tender. Blend cream of mushroom soup with milk and heat.

Add to cooked ingredients (to make creamier soup mash 3 to 4 times with potato masher). Garnish with cheese and hard boiled egg.
