Ingredients
- 8 boneless, skinless chicken thighs
- Salt & pepper
- 2 Tbsp. unsalted butter
- 2 Tbsp. vegetable oil
- 1/2 cup orange marmalade
- 1 Tbsp. Dijon mustard
- 2 tsp. lemon juice
Preparation
Step 1
1. Set a rack 6 inches from heat source & preheat broiler to high. Season chicken on all sides with salt & pepper.
2. Melt butter with oil over medium-high heat in a large ovenproof skillet. Add chicken & cook until lightly browned, about 4 minutes per side.
3. Combine marmalade, mustard & lemon juice in a small bowl. Stir until blended.
4. Pour off fat from skillet. Add marmalade mixture & turn chicken several times to coat. Place skillet in oven & broil chicken until glazed & cooked through, about 10 minutes. Turn often, watching so it doesn't scorch.
