Lentil Sausage Soup

Ingredients

  • 1 pkg turkey Italian sausage links, casings removed
  • 13 c water
  • 1 c chopped carrot
  • 1/2 c chopped celery
  • 2 t onion powder
  • 3/4 t dried oregano
  • 1/2 t garlic powder
  • 1/2 t dried basil
  • 1/2 t seasoning salt
  • 1/4 t pepper
  • 2 c dried lentils, rinsed
  • 1/2 c uncooked long grain rice
  • 2 cans (15 oz and one that is 8 oz)tomato sauce
  • 2 1/2 c frozen cheese tortellini

Preparation

Step 1

Crumble sausage into a skillet. Cook over med heat until no longer pink. Drain.

In a large saucepan, combine water, carrots, celery, onion powder, oregano, garlic powder, basil, salt and pepper. Add lentils and rice. Bring to a boil. Reduce the heat and cover. SImmer for 18-20 min or until lentils and rice are tender.

Stir in tomato sauce; return to a boil. Add tortellini and sausage. Cook for 3-4 min or until tortellini are tender, stirring several times.
