Raisin Pie

Ingredients

  • 2 tablespoons cornstarch
  • 3 cups raisins
  • 1/2 cup plus 1 tablespoon sugar
  • 1 cup water
  • 4 tablespoons unsalted butter
  • 1 double-crust pie shell

Preparation

Step 1

Adjust oven rack to lowest position and heat oven to 350 degrees.

Whisk milk and cornstarch in measuring cup. Bring raisins, 1/2 ccup sugar, and water to boil in large saucepan over medium-high heat. Remove from the heat and whisk in milk mixture and butter.

Pour into unbaked 9-inch pie shell. Brush edges of pastry with egg white and top with remaining pie crust. Seal and crimp edges. Brush top of dough with egg white and sprinkle with remaining sugar. Using paring knife, cut four vents in top of dough.

Bake until golden, 45 to 55 minutes. Cool on wire rack for at least 1 hour. Serve.

Pie can be wrapped in plastic and refrigerated for 2 days.
