Prime Rib*****

Ingredients

  • 7 pounds Prime Rib (I have butcher cut the bones off and then tie them back on)
  • 3 cloves garlic
  • 1 1/2 Tablespoons salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon thyme
  • 1/2 teaspoon pepper

Directions

Smear roast lightly with oil then rub sides of roast with paste made by mashing the above spices and garlic in a food processor. Wrap roast in foil l and refrigerate the night before.

Remove from the refrigerator and bring to room temperature (one hour or more).


Sear at 450 for 30 minutes (no foil). Reduce heat to 325 --1 hour and 15 minutes more. Cook to 120 for medium rare. (my oven takes longer) Let rest 15 minutes before carving.
