Pumpkin Bread - Paleo

Ingredients
- 1 cup almond butter, room temp
- 3 large eggs, room temp
- 1/2 cup pureed pumpkin
- 1/4 cup raw honey
- 4 Tbsp butter, room temp
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- pumpkin seeds to garnish
Preparation
Step 1
1. Preheat the oven to 325 degrees and grease a 9x5 loaf tin with coconut oil.
2. In one large bowl, mix all of the wet ingredients. In another bowl, mix the dry together. Add the dry to the wet and mix well.
3. Pour the batter into the greased loaf tin. Sprinkle the pumpkin seeds on top, don't mix them in.
4. Bake for about 40 minutes or until inserted toothpick comes out clean.
Let cool
