Ingredients
- 3 egg yolks-well beaten
- 1/2 cup sugar
- 1/4 cup lemon juice
- 3 egg whites-stiff
- 1/2 pint whipped cream
- 1 lemon rind –grated
- 1/8 teaspoon salt
- 1/2 cup vanilla wafers
Preparation
Step 1
In a saucepan (double boiler) put 3 egg yolks lemon juice, rind, salt and sugar. Beat continuously over low heat until custardy looking. Set aside to cool. In another bowl beat egg whites until stiff. Fold everything together with spatula. Fold in lemon ingredients. Spoon over top of crumbs. Spoon in mixture. Then rest of crumbs. Store in freezer.
