Coconut Butterballs

Ingredients

  • 1 cup soft butter 2 cups sifted flour
  • 1/4 cup sifted powdered sugar 1 1/2 cup flaked coconut
  • 1 teaspoon vanilla extract Sifted powdered sugar

Preparation

Step 1

Cream butter until light and fluffy, gradually adding sugar and then vanilla. Blend in flour, then coconut with wooden spoon. (Batter will be very stiff.) Shape into 1 inch balls; place on ungreased cookie sheets; refrigerate about 20 minutes. Bake at 350 degrees for 15 minutes or until delicately brown. While cookies are still warm, roll each in the sifted confectioners’ sugar. Optional: May add grean and red candy sparkles to sugar for festive appearance. Yield: 4 dozen cookie balls.
