Ingredients
- 4 Tbsp olive oil
- 6 cloves garlic, peeled, chopped
- 1/2 shallot, chopped
- 2 Tbsp parsley, washed, dried, chopped
- 1 tsp fresh thyme, leaves only
- 2 Tbsp fresh tarragon, chopped
- 1 Tbsp minced chives
- 1 lb butter, softened (let sit at room temperature for 30 min)
- Salt and pepper to taste
Preparation
Step 1
In a food processor, add oil, garlic and shallot. Pulse until a paste is achieved. Add fresh herbs and pulse until thoroughly blended but not obliterated.
In a stand mixer, add the butter and season with salt and pepper. Whisk butter on medium speed until butter is soft and workable, then switch to high for 15 seconds to incorporate some air. With a rubber spatula, scrape the herb garlic mixture from the food processor into the work bowl of the mixer. Hand fold into the whipped butter. Taste. Season with salt and pepper.
