Ingredients
- 2 cups cooked chicken, diced
- 1 cup chicken broth (how to make chicken broth)
- 1 small onion, diced
- 4 garlic cloves, minced
- 2 cups carrots, thinly sliced
- 2 celery stalks, thinly sliced
- 2 cups frozen peas
- 1 sweet pepper, seeded and diced
- 1/2 cup mushrooms, thinly sliced
- 1 tablespoon parsley
- 2 teaspoons thyme
- 1 teaspoon rosemary, crushed
- 1 teaspoon basil
- dash of pepper
- 1/2 cup plain yogurt
Preparation
Step 1
Add the chicken, chicken broth, vegetables and spices to large skillet. Cook over medium-high flame until the liquid begins to boil. Lower flame and simmer for an additional 10 – 15 minutes or until the carrots are fork tender.
Stir in yogurt and cook for an additional 2 minutes.
