Ingredients

  • 2

    cups cooked chicken, diced

  • 1

    cup chicken broth (how to make chicken broth)

  • 1

    small onion, diced

  • 4

    garlic cloves, minced

  • 2

    cups carrots, thinly sliced

  • 2

    celery stalks, thinly sliced

  • 2

    cups frozen peas

  • 1

    sweet pepper, seeded and diced

  • 1/2

    cup mushrooms, thinly sliced

  • 1

    tablespoon parsley

  • 2

    teaspoons thyme

  • 1

    teaspoon rosemary, crushed

  • 1

    teaspoon basil

  • dash of pepper

  • 1/2

    cup plain yogurt

Directions

Add the chicken, chicken broth, vegetables and spices to large skillet. Cook over medium-high flame until the liquid begins to boil. Lower flame and simmer for an additional 10 – 15 minutes or until the carrots are fork tender. Stir in yogurt and cook for an additional 2 minutes.
