chicken bruschetta

A wonderful light meal for simmer or a great party app

Ingredients

  • Ciabatta bread-lightly grilled or toasted
  • One pound cooked shredded chicken breast
  • One half to one pound grilled asparagus
  • 2 cups cherry tomatoes cut in half
  • 1/2 cup chopped calamari olives
  • 1/2 cup chopped green olives
  • 1/4 cup capers
  • 1 cup chopped artichoke hearts
  • Olive oil
  • Balsamic vinager
  • Goat cheese
  • Salt and pepper

Preparation

Step 1

Spread warm bread with goat cheese
Mix all ingredients except oil and vinager together and spoon onto bread. Drizzle with oil and vinager and serve.
