PIE, Meringue

Ingredients

  • FOR 9" PIE:
  • FOR 8" PIE"
  • 1/4 tsp. salt
  • 1/4 tsp. vanilla extract (if desired)
  • 2 egg whites
  • 4 Tbls. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract (if desired)
  • 3 egg whites
  • 6 Tbls. sugar

Preparation

Step 1

Add salt and extract to egg whites.
Beat to stiff foam.
Add sugar, a tablespoon at a time, and continue beating until mixture forms moist, lustrous peaks.
Spread over cooled filling, sealing to edge of pastry.

Bake in moderate oven (350 degrees) for 12-15 minutes.

NOTE: Egg whites will be fluffier when separated and left standing until room temperature. I always add egg yolks to filling if making cooked filling on stove. I would not recommend adding them to instant pudding or uncooked fillings.
