Ingredients
- 1 large onion
- 1 Tbsp. olive oil
- 1/4 C. water
- 2 Tbsp. brown sugar
- 1/4 tsp. salt
- 3/8 tsp. cayenne pepper
- 2 Tbsp. water
- 4 6 oz. salmon fillets
Preparation
Step 1
Preheat oven to 400 degrees.
Cover a baking pan with aluminum foil and spray with nonstick cooking spray.
Place salmon fillets on prepared baking pan and bake 30 minutes or until fillets flake easily with fork.
Meanwhile, slice onion into 1/4 inch rings.
About 10 minutes before salmon should be done, pour oil in skillet and place over medium heat. Add onions. Cook, stirring occasionally until onions begin to brown. Add 1/4 C. water and continue cooking several minutes until onions are tender.
While onions cook, combine brown sugar, salt, cayenne pepper and 2 tablespoons water in a small bowl. Mix well and add to cooked onions. Continue cooking while stirring until onions are coated and sauce thickens.
Spoon caramelized onions over salmon when ready to serve.
