Ingredients
- VINAIGRETTE
- 3 Tbsp freshly squeezed lime juice
- 1/5 Tbsp extra-virgin olive oil
- Hot pepper sauce to taste
- 1/8 tsp garlic salt
- BEAN SALAD
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (8.75 oz) corn kernels, drained
- 1 tomato, seeded and chopped
- 1/4 cup finely chopped red onion
- 2 Tbsp minced fresh cilantro
Preparation
Step 1
In a bowl, whisk together all vinaigrette ingredients. Stir in remaining ingredients. Cover and let salad stand at least 20 minutes to allow flavors to blend. Serve at room temperature.
