Rhubarb Applesauce Muffins

Ingredients

  • 2 C all-purpose flour
  • 1 C whole wheat flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/3 C packed brown sugar
  • 1 1/4 C applesauce
  • 1/2 C oil
  • 2 C rhubarb, cut into 1/4" pieces
  • cinnamon & brown sugar for topping

Preparation

Step 1

Preheat oven to 400°.
Combine flours, baking powder, cinnamon, baking soda & salt. Make a well in the center.
Beat eggs. Stir in brown sugar, applesauce & oil.
Pour egg mixture into the well in flour mixture. Stir until batter is combined but still slightly lumpy. Fold in rhubarb.
Grease muffin tin or line with paper liners. Spoon about 2 T batter into each cup. Sprinkle a pinch of cinnamon & brown sugar over the batter in each cup.
Bake 15 minutes or until muffins spring back when touched.
