Creamy Potato Bake

Ingredients

  • 8 to 10 potatoes
  • 4 oz. whipped cream cheese
  • 1 egg, beaten
  • 2 T. green onion, finely chopped
  • 1 T. parsley, finely chopped

Preparation

Step 1

Cook potatoes in boiling water. Drain and mash; add butter. Add whipped cream cheese; beat well. Add the remaining ingredients and blend thoroughly. If too dry, add a little milk.

Transfer to well greased baking dish. Dot with butter and sprinkle lightly with paprika. Bake in hot oven - 400 degrees for 30 minutes.

I always make this on Thanksgiving because everybody loves it. It can be made the day before and refrigerated. I take it out of the frig early so it can get close to room temperature. After the turkey comes out of the oven put the potatoes in and cook. Serve with gravy.
