Watercress Vichyssoise

Ingredients

  • 6 Cups prepared potato soup
  • 1 Medium size pear ripe, peeled and cored
  • 2 Bunches of watercress, leaves only
  • 1 Cup of heavy cream
  • Grated rind of one lemon

Preparation

Step 1

Puree the soup in a blender adding the pear, watercress and cream. Serve cold garnished with reserved watercress leaves and grated lemon rind.
