TURKEY A LA KING

Ingredients

  • 1/3 cup butter or margarine
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/4 lb. sliced mushrooms or 1 small can mushrooms, drained
  • 1 jar chopped pimentos, drained
  • 2 cups cut-up, cooked or canned turkey ( chicken)
  • 5 tbls. flour
  • 1/2 tsp. salt
  • dash pepper
  • 1 1/3 cups chicken broth
  • 1/2 cup light cream
  • Sherry to taste
  • ALL INGREDIENTS CAN BE ADJUSTED TO PERSONAL TASTE OR AMOUNT OF LEFTOVERS TO BE USED UP.

Preparation

Step 1

Melt butter or margarine in large skillet.

Saute onions, celery and mushrooms.

Stir in pimentos, salt, pepper and turkey.
Sprinkle flour over well mixed ingredients and stir until smooth .

Slowly add broth and cream.

Cook, stirring until thickened. (* if not thick enough, mix some flour and water in a small jar to make a Rue and shake until well mixed. Add slowly until mixture is of desired thickness)

Heat well for at least 5 minutes.
Add sherry to taste
