Cucumber & black bean salsa salad

Ingredients

  • 1 lg cucumber diced
  • 1 c sweet grape cherry tomatoes, halved
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/4 c finely chopped red onion
  • 1 med jalapeno, seeded and minced
  • 1/4 c chopped cilantro leaves
  • 1 med lime, zested and juiced
  • 2 tsp cider vinegar
  • 1 tbsp canola oil
  • 1/4 tsp pepper

Preparation

Step 1

In medium bowl, combine all of the ingredients.
Toss gently yet thoroughly to blend. Serve immediately or cover and refrigerate up to 4 hrs to blend flavours.
