Ingredients
- 1 lg cucumber diced
- 1 c sweet grape cherry tomatoes, halved
- 1 (15 oz) can black beans, rinsed and drained
- 1/4 c finely chopped red onion
- 1 med jalapeno, seeded and minced
- 1/4 c chopped cilantro leaves
- 1 med lime, zested and juiced
- 2 tsp cider vinegar
- 1 tbsp canola oil
- 1/4 tsp pepper

Preparation
Step 1
In medium bowl, combine all of the ingredients.
Toss gently yet thoroughly to blend. Serve immediately or cover and refrigerate up to 4 hrs to blend flavours.
