Oven Apple Pancakes

Ingredients

  • 4 eggs, well beaten
  • 1 c. milk
  • 1/4 tsp. salt
  • 1 c. flour
  • 1/2 c. sugar
  • 1 tbsp. cinnamon
  • 3 tart med. apples, peeled, cored, and cut in 1/4" wedges
  • 4 tbsp. butter
  • whipped cream (optional)

Preparation

Step 1

With whisk or rotary beater, beat eggs, milk, salt, and flour till smooth. Let batter rest. Combine sugar and cinnamon, sprinkle over apples and toss to mix. Butter generously two 9" pans, using 2 tbsp. for each pan. Divide apples between pans, stir batter and pour over apples (about 1 cup to each pan). Bake in preheated 375 degree oven for 30-40 mins. or till pancakes are golden brown, puffed and set. Serve hot in wedges topped with whipped cream. Good as dessert after a hearty soup. Makes two 9" pancakes.
