Ingredients
- 3 C uncooked penne pasta
- 1 lb fresh asparagus, trimmed or cut into 1 in. pieces (or use broccoli)
- 1 T butter
- 1 lb uncooked medium shrimp, peeled and deveined (may use precooked)
- 2 tsp flour
- 1/4 tsp salt
- 1/2 C half and half (may use FF)
- 1/2 C grated Parmesian
- 1 clove garlic minced
Preparation
Step 1
- Cook pasta according to directions
- Saute asparagus and garlic in butter for 4 min. add shrimp and cook 3 - 4 min. (if fresh) or to warm (if frozen)
- Combine the flour, salt and cream and add to skillet; bring to a boil and cook and stir 1 - 2 min until thick; stir in 1/4 C Parmesian
- Drain pasta and toss with shrimp mixture; sprinkle with remaining cheese
