Salmon with Pecan Crust

Ingredients

  • 2 salmon fillets- 6 oz ea.
  • 2 T mayo
  • 1/2 C finely chopped pecans
  • 1/3 C seasoned bread crumbs
  • 2 T grated Parmesian
  • 1 T minced fresh parsely
  • 1 T butter, melted

Preparation

Step 1

- Place salmon skin-side down in a greased 11 X 7 X 2 in. baking dish
- Spread 1 T mayo over each
- Combine the pecans, bread crumbs, cheese, parsely and butter; spoon over fish
- Bake at 425 for 10 - 15 min, until flakes easily
