Paleo Saucy Salmon/Tilapia

Ingredients

  • 1 Tbs Olive Oil
  • 6 Cloves Garlic
  • 1 (14oz) Can Fired Roasted Tomatoes
  • 1 (14oz) Can Low Sodium Tomatoe Sauce
  • 1 Chili Pepper
  • 1-1 1/2 Tsp Ground Cumin
  • 1 Tsp Ground Coriander
  • 1/2 Tsp S & P Each
  • 4 Skinless Tilapia/Salmon Fillets

Preparation

Step 1

Preheat Oven to 350 degrees. Heat oil in large saute pan over med-low heat. Add garlic and chili pepper and cook unitl slightly golden. Add diced tomatoes with juice, tomato sauce, cumin, coriander and s&p. Bring to boil, then reduce heat and simmer for 10 min until sauce thickens slightly.
Season fillets with s&p place in 9 by 13 in. glass bakin dish. Cover fish with sauce and cook for 15-25 min.
