Ingredients
- 1.5 T vegetable oil
- 1 small onion, chopped
- 1.5 t curry powder
- 1.5 c roast turkey, cut into bite-sized pieces
- 1 c cooked string beans, cut into 1/2" pieces
- 2 c mashed potatoes
- 2 c skim milk
- 4 T plain yogurt
- 4 T cilantro
- Salt
- Pepper
Preparation
Step 1
1. In a large saucepan, heat the oil over med heat.
2. Add onion & cook over med heat until soft, about 3 min.
3. Add curry powder & cook, stirring, 1 min.
4. Mix in turkey & string beans.
5. Add mashed potatoes, then whisk in skim milk until smooth.
6. Simmer, stirring, until heated through, about 5 min.
7. Season w/salt & pepper.
8. Ladle into bowls & garnish each w/1T of yogurt & cilantro.
