Balsamic and Grape Quinoa

Ingredients

  • 1 2/3 c. water
  • 1 c. red quinoa
  • 2 T. chopped fresh flat leaf parsley
  • 1 T. white balsamic vinegar
  • 2 tsp. olive oil
  • 1/4 tsp salt
  • 20 halved seeded red grapes

Preparation

Step 1

1. Bring water and quinoa to a boil. Reduce heat to low and simmer 12 minutes or until quinoa is tender.
2. Stir in remaining ingredients.
