Ingredients
- Pineapple Relish:
- 4-5 pound boneless pork roast.
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 cup soy sauce
- 1/4 cup Extra Virgin olive oil
- 3 cloves chopped garlic
- 1/4 cup brown sugar
- 1 cup fresh or canned pineapple, juice drained from can
- 1/4 cup sliced red onion
- 3 tablespoons chopped flat leaf parsley
Preparation
Step 1
Mix all ingredients in a freezer safe bag and marinate in your freezer or in your refrigerator for 2 hours.Place meat on the 1 inch rack and cook on power level HI for 20 to 25 per pound for frozen.Top with pineapple relish. Salt and pepper to taste (for pork tenderloins place on the 4-inch rack.)
