Black eyed peas and rice

Ingredients

  • 4 slices bacon, crumbled
  • 1 medium onion, chopped
  • 16 oz can black-eyed peas
  • 2 cups cooked rice
  • 1/2 cup water
  • 1 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Add onion to cooked bacon in microwave casserole dish. Microwave 2 to 4 minutes, uncovered. Add peas, rice, water, salt and pepper. Cover and microwave 8 to 10 minutes. Let stand covered 5 to 10 minutes
