Ingredients

  • 2 T. canola oil, more if needed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 t. salt, about
  • 8 oz. sliced mushrooms
  • 4 skin on, bone in, chicken thighs
  • fresh ground pepper
  • 1 cup dry white wine
  • 1 cup peas, fresh or frozen
  • 1 T. chopped fresh oregano, or 1 t. dried

Preparation

Step 1

1. Heat oil in large nonstick skillet over medium heat. Add the onions and garlic, seasoning them with a generous pinch of salt. Cook, stirring occasionally until onions soften about 6 min.
