Easter Spinach Salad

Ingredients

  • 2 bags spinach
  • 2 cans water chestnuts, thinly sliced
  • 4 hard boiled eggs, diced
  • 1 can bamboo shoots, optional
  • 1/2 lb bacon, fried crisp & crumbled
  • 1 cup salad oil
  • 1/4 cup cider vinegar
  • 1 medium omion, finely chopped
  • 3/4 cup sugar
  • 1 tbsp. Lea & Perrins
  • 1/3 cup ketchup

Preparation

Step 1

Dressing: Combine all ingredients in blender. Serves 15. Tightly closed jar in refrig. 1 wk.

Chill washed spinach. Toss together: spinach, water chestnuts, eggs & bamboo shoots.
Drizzle dressing, toss top with bacon crumbles.
