Ingredients
- 2 bags spinach
- 2 cans water chestnuts, thinly sliced
- 4 hard boiled eggs, diced
- 1 can bamboo shoots, optional
- 1/2 lb bacon, fried crisp & crumbled
- 1 cup salad oil
- 1/4 cup cider vinegar
- 1 medium omion, finely chopped
- 3/4 cup sugar
- 1 tbsp. Lea & Perrins
- 1/3 cup ketchup

Step 1
Dressing: Combine all ingredients in blender. Serves 15. Tightly closed jar in refrig. 1 wk.
Chill washed spinach. Toss together: spinach, water chestnuts, eggs & bamboo shoots.
Drizzle dressing, toss top with bacon crumbles.
