Ingredients
- 3 cups fresh arugula
- 2 cups baby spinach
- 2 clementines, peeled and in segments
- 1 cup strawberries, hulled and sliced
- 1/2 cup blueberries
- 1/2 cup praline pecans
- Dressing
- 2 ounces goat cheese
- Juice of one clementine (approx 2 tablespoons)
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/2 teaspoon apple cider vinegar
Preparation
Step 1
In a large bowl, toss together the arugula, spinach, clementines, strawberries and blueberries. Transfer to a platter and top with the pecans.
In a food processor, puree the goat cheese, clementine juice, honey, olive oil and vinegar. Spoon the dressing over the salad.
