Ingredients
- 1 whole egg
- 3 egg whites
- Non-stick olive oil cooking spray
- 1/2 c cooked spinach
- 1 t olive oil
- 2 chopped apricots
- 1 c non-fat plain yogurt
- 3 T [flaxseeds]
Preparation
Step 1
1. Heat EVOO in small pan; add spinach.
2. Spray another small frying pan & preheat.
3. In a small bowl, whisk whole egg & egg whites together.
4. Pour eggs into pan & scramble.
5. Gently fold the spinach into the eggs.
Yogurt
1. Mix apricots into yogurt & top with [flaxseeds].
