5 Minute Individual Potato Gratins

Ingredients

  • Vegetable spray
  • 2-3 russet or yukon gold potatoes, peeled and thinly sliced
  • 1/2 cup shredded swiss cheese
  • 2-3 green onions, chopped
  • Pepper
  • Salt, if desired
  • 2 T. each light cream or milk

Preparation

Step 1

Preheat oven to 375.

Spray about 12 muffin tins with vegetable spray. Layer potato slices, cheese and onions into each muffin cup, pressing down. Season with salt & pepper and top each with about 2 T. light cream. Cover with foil and bake about 35 min. Uncover and bake another 25 minutes. Invert gratins onto plate and serve.
