Pink Lemonade Pound Cake

Ingredients

  • Glaze:
  • 1 pkg. lemon cake mix
  • 1 pkg. instant lemon pudding mix
  • 4 eggs
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1/2 cup pink lemonade concentrate
  • 4 drops red food coloring
  • 1 cup frozen pink lemonade concentrate, thawed
  • 1/2 cup sugar
  • Icing:
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 2 Tbsp. cream
  • 1/2 tsp. vanilla

Preparation

Step 1

Preheat oven to 350. Grease and flour a tube pan.

Combine cake mix, pudding, eggs , vegetable oil, 1/2 cup lemonade concentrate, and milk. Mix until smooth. Add food coloring and blend until incorporated. Pour into prepared ban and bake for 50 minutes to 1 hour.

Remove from oven. Prick cake all over with fork and pour lemonade glaze over the cake. Let stand in pan until almost cool.

Remove cake from pan. For icing - Melt the butter. Sift the powdered sugar and add the butter. Add the cream and vanilla and beat until smooth, adding more milk if necessary. (May add a drop or two of red food color, if desired.) Drizzle over cooled cake.
