Fried Breaded Brussel Sprouts

Ingredients

  • 20 ounces brussel sprouts
  • 1 1/2 c unbleached flour
  • 1 1/2 c bread crumbs
  • 4 eggs, beaten (or 6 egg whites)
  • salt
  • pepper
  • garlic, minced
  • olive oil

Preparation

Step 1

Trim sprouts, cut in half lengthwise. Bring water to a boil and blanch the sprouts for about 4 - 6 minutes.

Place sprouts into a mixture of flour, salt and pepper, coat well. Remove and place the sprouts into beaten eggs, coat well. Remove and place into bread crumbs, coat well.

Fry the brussel sprouts in olive oil and garlic for about 10 minutes over medium heat or until a golden brown,
